Wild shrimp grilled with blackening seasoning served with our Cajun Mayonnaise Dipping Sauce and lemon wedges.
Smoked Salmon Platter - seasonally priced
Wild Salmon cured and smoked in house. Served with Creamy Horseradish Sauce, lemon, red onion, capers and toasts.

Our famous fall-off–the-bone tender pork ribs, grilled and basted then cut into individual bones with extra sauce on the side.

House Pulled Pork
Pork shoulder smoked overnight then hand-pulled and cleaned of fat and anything not meat.
Sliced Smoked Beef Brisket
The leanest cut of brisket, rubbed with house seasoning and smoked overnight.
Smoked 1⁄2 Game Hens
All natural hen brined and smoked. Tender, succulent, smoky meat on the bone.
Sliced Smoked Turkey Breast
Brined for moistness and smoked.
Grilled Smoked Sausages or Hot Links
Locally made smoked sausage or hot links grilled to perfection.
Baby Back Pork Ribs (add $2 per person)
Our famous fall-off–the-bone tender pork ribs, grilled and basted then cut into 2-3 bone portions.
Smoked Beef Ribs (add $4 per person)
All natural meaty ribs rubbed with house seasoning and smoked for hours until tender.

House Smoked Wild Salmon (seasonal pricing)
Cured and smoked in house. Wild salmon fillets are savory, sweet, moist and lightly smoked.
Smoked Pork Loin
Brined and smoked, boneless center pork loins are either served in chops or thinner slices. Try it with a special peach chutney
Glazed Smoked Ham
Carlton Farms pitt-style ham glazed with bourbon, brown sugar and spices.

Creamy Goodness Macaroni and Cheese
A winning combination of extra sharp Tillamook cheddar, sharp cheddar, Asiago and blue cheeses in the sauce.

Russet potatoes with lots of dairy, salt and white pepper.
Creamy Cole Slaw
House shredded green and red cabbages, carrots and a touch of onion tossed in a mayonnaise-sour cream dressing.
Mom’s Potato Salad
Red potatoes with celery, red onion and hard cooked eggs in a creamy mayonnaise dressing. Yes, this is my Mother’s recipe.

Romaine, carrots and red cabbage mix with your choice of house-made dressings.

Classic Sauce: A balance of heat and sweet make this the perfect all-around sauce. Might be too hot for sensitive palates.
Killer Sauce: Our Classic Sauce with the added kick of cayenne and chile paste. Not for the faint of heart.
Kind Sauce: The Classic Sauce without chipotles to keep it mild.
Derby Mustard Sauce: The chefs’ creation made with Beaverton Foods grain mustard, brown sugar and spices. Goes very well with seafood and poultry.
North Carolina Vinegar Sauce: In the Carolinas, this is the only sauce there is! Cider vinegar punched up with chile flakes and toned with brown sugar.
Alabama White Sauce: This has a spicy-vinegary flavor that is perfect with game hens, pork or turkey.

$200 Minimum order for delivery • Orders must be received by 2:00 PM at least 2 days in advance • Some items and service require 72 hours notice • Deliveries scheduled in the order in which they are received • Only the Restaurant Menu is available for same-day pick-ups

catering levels of service
Delivery/Set
We deliver hot BBQ and arrange it on a table pre-set by the client.
COST: $25 per 75 guests within a 5-mile radius of RSQ. Additional mileage for distances outside the 5-mile radius is $1 per mile, round trip.
Delivery/Serve
We arrive with Hot BBQ, set up Buffet Tables and serve guests for 45 minutes* We then box up leftovers, clean and break down our tables
COST: $125 per 50 guests + 18% gratuity based on food and beverage costs.
Includes Buffet Tables, Serving Utensils and serving platters.
*Please Note: Service Over 45 minutes and sites further than 15 minutes travel time will be billed at $18 per hour per server.
Full Service
Our catering staff arrives before your guests. We set up tables, chairs, place settings, etc. We provide professional service throughout your event. We create and present stellar food. At the conclusion of the event we box up left over BBQ, break down and clean up thoroughly.

bar service options
Delivery/Set
We deliver beverages and arrange it on a table pre-set by the client. (Hot Lips Soda, Coke Products, Root Beer, Lemonade, Sweet Tea & Unsweetened Tea)
COST: Cost of goods.
Delivery/Serve
We arrive to set up a beverage table then maintain, clean and stock throughout event. After 45 minutes we clean and break down our table.
COST: $2 per person with CLIENT SUPPLIED alcohol. We supply table, cloths and all tools required to support event.
Full Service
Our catering staff arrives before your guests. We set up a bar tailored to fit your needs from Sweet Tea to our signature cocktail the “Piggy Punch”.
COST: Determined by the scope of the event.
